Light scattering measurement of phytoglycogen

Abstract
We will describe the use of a multi-detector HPLC incorporating the DAWN EOS multi-angle laser light scattering (MALLS) detector to measure the properties of yeast phytoglycogen, which has many applications in baking, making beer and wine as well as in making cosmetics. Our measurements of a purified yeast phytoglycogen sample were intended to characterize the quality of the samples of yeast phytoglycogen by reporting properties such as molecular weight, RMS radius, contour and persistence length and polydispersity. Data and results obtained from the experiment will be presented.
